This Healthy Chocolate Peanut Butter Baked Oatmeal Recipe is a great way to start your morning! This nutritious breakfast is packed with healthy fats, carbs, and delicious chocolate peanut butter flavor. Perfect for meal prepping!
Preheat the oven to 350 degrees F. Grease an oven safe 8x8 baking dish by spraying with cooking spray
In a mixing bowl, combine egg, almond milk, peanut butter, melted coconut oil and honey until combined. Stir in oatmeal, cinnamon and chocolate chips.
Pour the batter in greased baking dish. Bake for 30-35 minutes until cooked through. The top should start to brown and should be set.

Baked Oatmeal Substitutions:
Nut Butter: You can use cashew butter or almond butter instead of peanut butter if you prefer
