Peach Caprese Salad is a must make during summer months. A light, fresh stone fruit salad that is as pretty as it is delicious and healthy!

This stone fruit salad is the recipe I make over and over again during warmer months. Juicy peaches, sweet cherries, fresh tomatoes and creamy mozzarella are truly the perfect combo.

This is one of my favorite things to eat for lunch with Balsamic Grilled Chicken or alongside our Greek Orzo Salad.

Unlike other salads that aren’t super filling, this is hearty and satisfying. You can easily add more veggies to bulk it up, but it’s delicious as is!

Liz Tips for the Best Stone Fruit Salad

  • buy a cherry pitter – As a minimalist when it comes to kitchen gadgets, trust me, this is worth spending $10 on. I regret not buying one sooner.
  • Serve it fresh – Peaches can turn brown and start to get soft if they sit in the fridge for more than an hour. This salad is best served fresh, right after you cut the fruit.
  • Wait to dress the salad until you’re ready to eat -Drizzle your olive oil and balsamic glaze right before you’re ready to enjoy.

Highly recommend getting a cherry pitter to save time on pitting the cherries!

substitutions

Balsamic Glaze: We like the sweetness that a balsamic glaze adds to the salad, but you could use balsamic vinegar if you’d like. I’d use slightly less. This is our favorite balsamic glaze.

Dressing: You can also dress the salad in our Creamy Balsamic Dressing instead of using olive oil/balsamic glaze.

Peaches: You can substitute peaches with nectarines. Strawberries or blueberries would also be a delicious addition.

Tomatoes: If you don’t have cherry tomatoes you can cube heirloom tomatoes.

Cherries: White or red cherries both work in this recipe.

To Make it Lower Carb: Use less fruit and more veggies/cheese.

To Make it Lower Calorie: Spray your salad with olive oil spray so you can control how much fat you’re adding.

How to Make Peach Caprese Salad

  1. Add your fruit to a bowl.

  1. Add fresh mozzarella, basil, salt and pepper

3. Add balsamic glaze and olive oil. Serve immediately.

Serving Suggestions

My favorite way to enjoy this salad is with our Balsamic Grilled Chicken. It’s also great with Pineapple Grilled Chicken or our Greek Yogurt Marinated Chicken.

I like to add chopped cucumbers and bell peppers to this salad for vegetables, or you can serve it with Grilled Vegetable Kebabs or Grilled BBQ Vegetables.

storage

Storing: This salad is best eaten fresh. Peaches and cherries get soft quickly in the refrigerator once cut. This will last in the refrigerator for up to 2 days in an airtight container.

Ingredients

  • 1 lb fresh mozzarella balls
  • 2 cups halved cherry tomatoes
  • 2 cups pitted, halved cherries
  • 2 cups sliced peaches
  • ½ cup finely chopped fresh basil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup Filippo Berio Delicato Olive Oil
  • ¼ cup Filippo Berio Balsamic Glaze

Instructions

  1. In a large bowl add the mozzarella, cherry tomatoes, cherries, peaches, basil, salt and pepper. Toss until combined.
  2. Drizzle with olive oil and balsamic glaze.
  3. Toss together and serve immediately.

    This Peach Caprese Salad sounds perfect for summer! Have you tried adding fresh basil or a sprinkle of toasted nuts for a little extra flavor and crunch?

    1. There is ½ cup finely chopped fresh basil in the recipe! I haven’t added toasted nuts but I’m sure you could!
